Pumpkin Pie- my dirty secret



Recently I discovered an American supermarket in Holland Park, which stocks shelves of well-priced exports like Libby’s pumpkin pie mix. Yes, mix! Every chef has something ready-made that they love to eat in private and pumpkin pie is my dirty secret.


1 can of Libby’s pumpkin pie mix

3/4 can evaporated milk

1 teaspoon of cinnamon

1 teaspoon of all spice

2 beaten eggs

1/4 cup of white sugar

Sweet pie crust


Preheat oven to 180 degrees Celsius

1. Mix the beaten eggs with the spices and sugar

2. Spoon the pumpkin puree  into the spice and egg mix before slowly incorporating the evaporated milk

4. Scoop the pumpkin pie filling into a pie crust and cook for 30-40 minutes, or until the knife comes out clean

5. Serve with whip cream
