Pan fried Feta with peach puree and toasted hazelnuts

feta with peaches 2This dish is absolutely delicious and so simple to make. You could easily whip this up if guests come calling unannounced and let’s face it, it’s far more appealing than stale biscuits on a plate. 

feta_I know it’s hard visually to make fried feta ‘sexy’ but the peach puree is like the perfect pair of stomach holding in panties- covering up all the wobbly flaws and making the dish look gorgeous.

Pan fried Feta with peach puree and toasted hazelnuts

  1. 25 grams crushed hazelnuts
  2. 2 peaches
  3. 1 block of feta
  4. 2 teaspoons caster sugar
  5. 1 tablespoon of unsalted butter
  1. Melt the butter over a medium heat, once the pan is hot toast the hazelnuts and feta together
  2. Flip the feta to evenly brown both sides
  3. Peel the skin off two peaches and roughly chop them after removing the pit
  4. Boil three tablespoons of water in a hot pan with the peaches and sugar for 6 minutes
  5. Blitz the peaches and water in a processor and pour into serving dish
  6. Serve the feta and hazelnuts with the peach puree and enjoy while warm
