Mac and Cheese aka “The heart attack and orgasm”


“An orgasm and a heart attack all at once”- is how my friend describes my Mac and Cheese, which I take as the kindest compliment. Mental Note: Get her to review all my recipes.  

This is comfort food for the soul, the bad break up, the wrong time of the month and the feeling shakey Sunday mornings. I rarely indulge my cravings for Mac and Cheese, however last weekend was cold and I was too exhausted to fight the craving.


400 grams of macaroni pasta

1/2 cup grated mature cheddar

1 /2cup grated gouda/ red leicester

1/4 cup Parmesan

2 cups milk

3 tablespoons of butter

3 tablespoons of white flour

2 crushed cloves of garlic

Optional: Diced bacon rashers or pancetta

Handful Panko breadcrumbs


1. Boil water and cook the macaroni pasta over medium heat as per the instructions on the packet

2. Cook the garlic and bacon over medium heat until the bacon is crispy

3. Melt the butter over the garlic and bacon before mixing in the flour. The butter and flour should make a yellow dough mixture, which must be cooked over medium heat for one minute

4. Slowly add the milk, 1/2 a cup at a time, to the dough. In between each 1/2 cup of milk whisk the mixture so that the sauce doesn’t get lumpy

5. Add the different cheeses to the sauce and whisk until it melts

6. Mix the pasta with the cheese (and bacon) sauce before pouring it into an oven proof dish

7. Scatter Panko breadcrumbs over the macaroni and cheese and then cook it in the oven for twenty minutes or until the top is golden brown

8. Serve warm, eat more than you should and groan quietly
