avocadoandchicken3Readers, it is time for me to get healthy and hopefully you will join me in shedding a few pounds, gaining some muscle and eating right! They always say a summer body starts in winter. 

This push for health and fitness began after three months of continual eating in New York and Austria.  While I loved every minute of it and counted no calories at the time, I have definitely paid the price of gluttony. And that price was 5 kilos! 

Recipes on this blog will now focus on low carbs and minimal sugar. So, without further a due I present avocado stuffed with shredded chicken  served with mixed pepper and roasted corn salad. avocadoandchicken2

Avocados stuffed with shredded chicken

Ingredients
  1. 3 chicken breasts
  2. 2 avocados
  3. 2 husks of corn
  4. 1 red pepper
  5. 1 yellow pepper
  6. 1/2 teaspoon smoked paprika
  7. 1 teaspoon hot sauce
Instructions
  1. Preheat oven to 160 degrees Celsius
  2. Cut the corn off the cob and place the kernels in a baking tray along with both peppers
  3. Drizzle a small amount of olive oil over the vegetables before baking them in the oven for 40 minutes
  4. Place the raw chicken breasts inside a deep pot of boiling water and leave to cook for 30 minutes
  5. Remove the chicken breasts and begin shredding the meat by pulling it apart with two forks
  6. Toss the shredded chicken in with the smoked paprika and hot sauce, feel free to add more spice if you prefer
  7. Cut the avocados in half and remove the skin
  8. Stuff the chicken inside the avocado before sprinkling the corn and pepper mixture over it
  9. Serve warm or cold, it's all healthy and delicious

Black Forest Hot Chocolate

blackforesthotchoc4blackforesthotchoc5 I love nothing more after being outside on a cold winters day than warming my bones with an alcoholic hot chocolate. 

In our house, Bailey’s is not the mixer of choice and unlike Mister C I am not a fan of rum. So this left me with a culinary conundrum about how to create this years festive hot chocolate. 

Randomly while mulling this over I began discussing a new festive tradition, where I offered to cook Mister C’s favourite three-course meal.  It’s no secret that black forest cake is his absolute favourite dessert and that’s when the lightbulb clicked. 

Kirsch! This is a German cherry liquor that is commonly found in Mon Cheri chocolate and also in black forest cake. blackforesthotchoc  I realised that making a liquid version of his favourite cake would be a genius way to enjoy it throughout the Christmas season. and let me tell you, this is absolutely delicious. It might not be calorie free but who’s been counting since the advent calendar rolled out on December 1st?! blackforesthotchoc3

Black Forest Hot Chocolate

Ingredients
  1. 1 cup skim milk
  2. 3/4 cup whipped cream
  3. 1/4 cup grated dairy milk chocolate
  4. 1/2 cup grated dark chocolate
  5. 1 teaspoon of Kirsch (you can ALWAYS add more)
  6. 1 black cherry
Instructions
  1. Heat the milk, 1/4 cup of the whipping cream, milk chocolate, 1/4 cup of the dark chocolate and Kirsch over a medium heat
  2. Whisk the ingredients together until the chocolate has entirely melted
  3. Meanwhile, whisk the remaining whipping cream until stiff peaks form
  4. Pour the Kirsch hot chocolate into a cup, top with freshly whipped cream, 1/4 dark chocolate and 1 black cherry
  5. Enjoy and Merry Christmas
